With summer coming to a close, that means tailgating season is just around the corner! From all the processed snacks, chips, and fried foods available during these pre-game feasts, it can be easy to put on ‘holiday weight’ a couple months early. The key to avoiding these calorie-bombs at events is to bring healthy snack alternatives that are easy to grab and taste great. These “healthified” jalapeño poppers are the perfect recipe to set yourself up for success.
"Healthified" Jalapeño Poppers
Ingredients:
- Jalapeños
- Nitrate-free ham, thinly sliced
- Light cream cheese
Directions:
Preheat the oven to 450 degrees and line a baking sheet with aluminum foil. Slice jalapeños in half and scoop out the inside membrane, leaving more seeds if you'd like them spicier. Spoon cream cheese into the jalapeño halves until almost filled (putting in too much will cause cheese to melt out). Slice or tear ham into thin strips and wrap around the jalapeño halves. Use a toothpick to poke through jalapeño horizontally, making sure the ham is secured. If you’re feeling bold and want to make these EXTRA cheesy, sprinkle a pinch of part-skim shredded cheddar on top of each popper. Place in oven and bake for 12-15 minutes, or until the jalapeños are tender and cheese is melted. Remove from oven and enjoy!
